You mention that the Signet charred your burgers, basically from getting too hot..that seems off base, one wants a nice hot area to sear, but would normally have two zones on the surface to move burgers in and out of. I’m not a fan boy of any of these, but that sounds like poor cooking technique, when having a gas grill that can get very hot is a huge advantage. If you relied on warm ups, and steady temps by reading only the dome thermometers, which you seem to imply in the testing of the Napoleon, it sort of invalidates your entire test. With a real thermometer, that grill just might show great steady state performance if you calibrated it properly. (read Meathead mentor) Even the highest quality grills usually have terrible lid thermometers and they also are not at the grill surface where food is. You simply must get to know any new grill with a good quality probe.

That said, this grill is sturdier than I expected. I've had more expensive grills that were significantly flimsier. The grill is also much tighter than I expected. No, it is nowhere near airtight. But, it is not a smoker; it is a smoker grill. Many reviews suggest the writer doesn't know there is a difference. The side firebox works great to smoke food with indirect heat and the grill holds temperature fairly well. By that, I mean heat loss occurs steadily, but somewhat quickly, as the fuel source burns down. This is a small grill, which, depending on your needs, is a plus or minus. It is great for 1 - 4 people. It just fit 2 racks of uncooked pork ribs, or 8 large hamburgers. The one big negative is the thermometer. While I have never had a grill which had an accurate built-in thermometer - including Webers - this one is almost useless. After 6 hours of smoking, keeping track of the temperature by the grill's thermometer, the ribs were still mostly uncooked. I tested the thermometer by hanging a remote control grilling thermometer's probe down the chimney so that it was suspended in the cooking chamber. I know this thermometer to be accurate and it recorded temperatures as much as 100 degrees below the temperature shown on the grill's thermometer. Despite its temperature probe, I suspect the grill's thermometer is picking up a lot of heat from the lid itself. So, to sum it up, it's no gold standard grill, but it is better than the price would suggest. It's small, it smokes great, but DON'T rely on its thermometer!
Preservation Methods We’ve certainly had some great grilling weather here in the UK just recently and the scent of barbecue is wafting down my street right now! These grills really do look fantastic but I really couldn’t justify the expense given that I’d only get to use it 3-4 times per year.
