Many supposedly good bbq restaurants I have been in serve something with a bitter or ash flavor, which I find much less enjoyable.

Small family run BBQ food is very good. I really like the Rosemary fries I am not a fry guy but make a point to order when I go. I had the sampler, ribs, pork and brisket with fries and baked beans.
