I have tasted all his sauces and they are very good, but the 3 times I have been there, his sauces never touch my ribs and brisket! Aaron does say, if you like this you need to try my competition food (which I will at one of the competitions he is in locally). None of the KCBS, Houston or Memphis in may winners Q had even a hint of ash or bitter smoke flavor. They also had a very light smoke profile. They also all say they cook over well burned down wood.

My only interest is smoking, not grilling, and I prefer even heat throughout the cooking chamber. How much difference does the location of the burn pot make? Thank you very much.

Traeger Smoker – Buyer beware. My Traeger stopped working both times I’ve used it. It just stops after about 2 hours. Traeger’s response is their pillory is they don’t make refunds. The nearest service is 3 hours away and it’s just too far for them. They said the solution to it stopping is for me to partially disassemble it when it stops and vacuum out the burner pot. They said they would talk me through some troubleshooting. They offered to send me replacement parts but said they don’t think it will help. I can’t return it, they can’t determine a fix for it. I’m supposed to just eat the $830 cost for a smoker that doesn’t work.

The portable charcoal grill is a no-frills approach to outdoor cooking, with the same basic features as the one-piece kettle models first produced by Weber in the early 1950s: a seamless metal drum where the briquettes are placed and lit, with a metal grate placed over the top for holding the meat and veggies while they cook, plus tripod legs and a lid. There’s not much more to it than that.

Grills and smokers are all made of metal, which means they are all more or less prone to rust. The only way to stop your investment from literally falling apart in front of your eyes is to keep up on basic maintenance. Still, some require a lot more attention than others, and some have obstacles that further complicate maintenance.
So, the major problem is inconsistent heat-transfer to the food. The grate is Teflon-coated for easy clean up: that's good. And, except for the center four inches or so, the grate's serrations are corrugated and slotted to allow heat-transfer and drainage: that's good too. But, heat transfer relies on that center four inches of solid grate: it's there to transfer heat from an isolated source to the surrounding grate. Unfortunately, the grate needed to be designed thin to reduce cost and weight, (it bends easily). Consequently, this grill simply cannot cook evenly or expediently:and it will require your undivided attention to avoid over-cooking and under-cooking, i.e. constantly moving food. Since substantial radiation is sacrificed for size, a heavier grate with larger perforations is needed for more efficient and sustained conduction. But, that would require more R&D and a major field change in design to accommodate heavier material, i.e. more expense.
