But, heat transfer relies on that center four inches of solid grate: it's there to transfer heat from an isolated source to the surrounding grate. Unfortunately, the grate needed to be designed thin to reduce cost and weight, (it bends easily). Consequently, this grill simply cannot cook evenly or expediently:and it will require your undivided attention to avoid over-cooking and under-cooking, i.e. constantly moving food. Since substantial radiation is sacrificed for size, a heavier grate with larger perforations is needed for more efficient and sustained conduction. But, that would require more R&D and a major field change in design to accommodate heavier material, i.e. more expense.
