I like the idea of a pellet grill, but in reality- I’m mostly cooking burgers, fish, steaks, scallops, and veggies. The brisket and ribs will be more of a special occasion. From an economical perspective, am I better buying a gas grill and just getting one of those smoke tubes to add some flavor? From many of the online comments, it seems like the pellet grills benefit from additional smoke anyway, and though you can get additional grates for searing, seems like a square peg in a round hole. The gas grill is sort of the tried and true, and way more economical. Those $500 entry level pellet grills seem a little scrawny, and the next level up is a cool $grand. I’m really on the fence, and getting pressure to “just buy the darn thing” to consummate the move to the country! However the pellet grills seem like the new shiny object and have my curiosity. The Spirit E-310’s is mounted high up inside the grill cart, and we found lifting the tank onto the scale’s hook difficult; it would be impossible if the tank had the wrong sort of handle (they come in various designs, and some are too big). You may have to guess the fuel level by weighing the tank in your hands.

These followed a Weber 47cm Classic which I have had for 35 years out in an English weather garden and still cooks beautifully – just way too good to throw away ! So I am something of a Weberophile ! Just a couple of small points. The Performer does not use propane. It actually consumes by design a butane/propane mix, which increases the ambient temperature range at which it will operate with sufficient calorific value at low pressure. Someone also said something about bypassing the little 1lb canister and coupling up to a big gas bottle to save money. No need. The whole point is that the gas is used solely to ignite the charcoal – 5 to 10 mins, depending on dampness. Switch off and the chimney effect will have those coals red hot in another 5 to 10 mins. (My son in law, a real pyromaniac using a Performer in an English January, says his first 1lb canister lasted 15 months !) Cooking is then immediate – no waiting for another 20 minutes to be rid of chemical taint. Incidentally, I have eaten propane-barbecued steaks in various parts of the world. Always the same problem – you can taste the propane. Yuk.

There is a burner at the bottom, usually made of brass or cast aluminum, very durable, with numerous jets. Above the burner is a shelf for a pan for the wood, and above that is a shelf for a water pan. Above that are four or more shelves for food. The bottom vents cannot be adjusted to make sure the gas gets enough oxygen. At the top there is either a chimney or a damper or two. You should always leave the top vent open all the way to prevent soot buildup on your meat.

I must confess I’m one of those purists when it comes to grilling meat, I prefer coal over gas, the food just tastes differently, it adds that little something special. This post couldn’t come at at better time, my old portable Cuisinart died on me last week and while I love my big Weber Master Touch, it isn’t really an option if I’m cooking only for the two of us. Thank you for the great tips, I was planning to replace my Cuisinart but I hadn’t any ideas about what to look for. I think I’ll go for another Weber, the Smokey Jeo sounds like a great choice.

With the traeger, rec-tec or cam chef smokers all seem to burn 1-2lbs per hour. But for a long 18hr brisket it seems like I will have to continue to use pellets the whole time to keep the heat in range over over 200 which will mean I am using almost a 20-40lb bag depending on the time year per smoke. This is even more expensive than the bradley seems even with the wasted briquette. IS this correct or is there something I am missing?
