ALL RIGHTS RESERVED One of the first steps in selecting a new grill is to decide if you want charcoal or gas heated unit (or perhaps a combo). Each of these fuel sources has its pros and cons and it can be a difficult choice. Would you rather have more convenience and have the ability to flick the flame on with a twist of dial and give up a little flavor? Or would you rather take a little more time in prepping and cleaning but have an excellent wood fired taste imparted to your food?
Much more expensive than the Top Pick We assembled the six grills alone and in teams of two, to see if the former was even possible (answer: yes, when the instructions were clear and the assembly was well thought out) and whether the latter made much of a difference (answer: yes, in every case). Our testers had various levels of experience, too, so this wasn’t just a judgment among “professionals.”
BBQ STORE A good pellet grill will grill, roast, and smoke. A wood pellet is a small, 1/4 inch diameter piece of hardwood and looks like a long pill. Because of their small size, wood pellets burn cleanly and quickly to a fine ash.
Let’s be honest. This question is really about cast iron. The science is still out on whether aged cast iron genuinely makes better food, but the jury leans on the side of ‘no.’ Regardless, a new cast iron BBQ smoker doesn’t have an advantage over smokers of any other materials you may buy. A cast iron smoker and a stainless steel smoker both benefit from seasoning. Cast iron has high maintenance demands, but if you love it, then you’re probably willing to make the sacrifice. Keep in mind, preventing a skillet from rusting is much easier than keeping a big smoker from rusting. So, if you have plans of passing on your smoker to your great, great grandchildren as a magical flavor machine, keep in mind that your offspring are expected to have much longer lives than any smoker or grill on today’s market.

Generally speaking cheap grills are not made with quality materials. While the outside may look good, often times you will find the guts of the grill are made with lower grade metals.

The Napoleon Rogue 425 ($600 at the time of this writing) is the Canadian company’s flagship in the $400 to $700 range. Like the other models we tested in that category, it has a cast-aluminum firebox, porcelain-coated cast-iron grates, and three burners. On paper, it has a lot going for it, but we were disappointed in its performance. Despite showing 650 °F heat on our burger test, it failed to achieve a good sear—a combination, we expect, of the pyramidal grate bars making minimal contact with the meat, and the grill’s thermometer overstating the actual temperature by about 50 degrees (we measured it independently with an accurate probe thermometer). It also struggled to hold a steady heat on the barbecue-chicken test. Napoleon’s signature is its wavy grates, and they do look cool—but they’re harder to clean than straight grates. They also leave odd, distorted sear marks if you try to make the classic crosshatch pattern. Assembly was straightforward, and we found the instruction manual well-done. But given the Weber Spirit E-310’s higher performance and lower cost, the choice was clear.
A great selling point for me is Weber’s One-Touch cleaning system. To clean it out after each use, all you have to do is turn the handle of the cleaning system. Three blades will move all the ash and leftover bits of charcoal down though the bottom air vents and into an ash catcher.
12.99 · October 9, 2016 This product offers a lot of bang for your buck, and although ordering replacement parts is a bit of a hassle, it doesn’t impact value all that much. This smoker functions perfectly well as a grill, roaster, and barbeque, and it’s rare to find a multipurpose smoker that actually fulfills that claim. Its cooking space is huge, too, so if you have the time and patience to deal with customer service, this is still a sound investment.

Kamados are easy to light and get working, they are as simple as a grill can get. This simplicity can be a downside sometimes, and the generally smaller grilling space is less than what a lot of people want. For a small, efficient grill for a garden or yard, a kamado is hard to beat. Plus, they look great and produce fabulous tasting meat.

Set it and forget it, that's the selling point of gas smokers. Just be sure to budget for at least two LP tanks, because smoking meat can require loooong cook times, and you don't want to run out of fuel. Since gas itself doesn't produce smoke, you add it by tossing chips or chunks on a pan above the burner. There are many options under $200, and they all work pretty darn well. And a note to potential wood snobs: Most of the nation's best BBQ joints now smoke with gas for heat and wood for flavor (not talking about you, Texas).
